St. Peter Food Co-op and Deli

St. Peter, MN

The St. Peter Food Co-op & Deli expanded its operations into a renovated auto dealership in historic downtown St. Peter. The Co-op has steadily grown over decades, and finally outgrew its former location on Broadway and Minnesota Avenues. The new location, a 10,000-square-foot space, offers more local produce & dairy options, organic products, an expanded deli, and larger area for dining and community meetings. There is also a new teaching kitchen and more education and class offerings.

The adaptive reuse of the former Nielsen Chevrolet auto dealership was an ideal sustainable option for the Co-op. Not only was the interior space large and open for a grocery store layout with easy truck loading and access, but the original terrazzo showroom floor was preserved for the dining room area. The existing wood roof trusses also helped create a warm glow with the indirect lighting and clerestory windows. Many sustainable interior finishes and materials were used for the renovation of the building

The Co-op now offers outdoor seating with a trellis, more space for an on-site garden, bicycle parking, and space for outdoor events.
